April 17 at 1:42 PMI thought I was doing a pretty good job with a mostly plant based diet but I have come to realize I am NOT great at it! Ha! I am really trying to amend 2 meals a day to more than meatless - but to be vegan and it's HARD! This will be an interesting reflection at the end...

April 16 at 11:34 AMWe did really good yesterday!! We only wasted about 4 oz of food yesterday and it was only because we had to snap the ends off of the asparagus.

April 15 at 12:27 PMI am making it a practice to get out before I get on my computer every morning. I have scoped out a 3 mile loop through the wetlands near my house. I don't listen to music or have headphones - just spend time being present in my surroundings. I leave my phone at home too to really make sure I disconnect. Here's part of the wetlands!
